Anyone know of any good sites that cover Joe customizing?  Like going through the basics of how to do it, not just pics of people's creations.  I wanna know stuff like how to remove paint and doing sanding and priming etc.

Yeah, joecustoms.com. The best resource/discussion place all about gijoe customizing. Just check the sidebar on the left for tutorials that people have submitted.
